What are some good recipes that use leftover Thanksgiving turkey?

Chicken OR Turkey Pot Pie


INGREDIENTS


1 (10.75 ounce) can Campbell's庐 Condensed Cream of Chicken Soup (regular, 98% Fat Free, or 25% Less Sodium)*


1 (10 ounce) package frozen mixed vegetables, thawed


1 cup cubed cooked chicken or turkey


1/2 cup milk


1 egg


1 cup all-purpose baking mix








DIRECTIONS


Preheat oven to 400 degrees F.


Mix soup, vegetables and chicken/turkey in 9-inch pie plate.


Mix milk, egg and baking mix. Pour over chicken/turkey mixture. Bake 30 minutes or until golden.

Turkey Broccoli Casserole


A delicious casserole with turkey, cheddar cheese, Parmesan cheese, and broccoli.


Ingredients:


2 tablespoons butter


2 tablespoons flour


1 1/4 cups milk


1 egg yolk, slightly beaten


1/4 teaspoon dry mustard


1/4 teaspoon salt


1/8 teaspoon ground black pepper


1/4 cup grated Cheddar cheese


2 packages (10 ounces each) frozen broccoli spears cooked and drained


sliced cooked turkey, about 1 pound, enough for 6 servings


2 tablespoons grated Parmesan cheese


Preparation:


Melt butter. Add flour and cook, stirring until mixture bubbles. Remove from heat; gradually blend in milk and egg yolk. Add dry mustard, salt, and pepper. Cook, stirring constantly, until mixture is thickened and begins to boil. Add Cheddar cheese and cook, stirring, until cheese is melted. Arrange hot broccoli and turkey in 12 x 8-inch dish, spooning sauce between layers and on top. Sprinkle with Parmesan cheese. Broil about 4 inches from heat until cheese is browned.

Turkey enchilada recipe, made with leftover turkey, cheese, sour cream, and tortillas. Serve turkey enchiladas with rice or a tossed salad.


Ingredients:


3 cups cooked turkey, shredded


2 cups sour cream


2 cups shredded cheddar cheese


1 teaspoon salt


12 (10-inch) tortillas, corn or flour


1/3 cup corn oil

Sauce:


2 cans (4 ounces each) chopped mild green chile peppers


1 clove garlic, minced


2 tablespoons olive oil


2 cups chopped onion


1 teaspoon salt


1/2 teaspoon oregano


1/2 cup water


1 1/2 pounds stewed tomatoes


Preparation:


Combine turkey with sour cream, cheese and 1 teaspoon salt. Heat 1/3 cup of oil and dip tortillas in until soft and drain. Stuff with turkey mixture and roll up. Arrange, seam side down, side-by-side in shallow baking pan.


Prepare sauce. Saut茅 chiles with garlic in oil. Add stewed tomatoes, onions, 1 teaspoon salt, oregano and water. Simmer uncovered until thick, about 1/2 hour.


Pour the chile sauce over enchiladas and bake at 350掳 for about 30 minutes, or until hot and bubbly. Let set 5-10 minutes before serving.

Turkey stew::: I recomend a home made dressing NOT stove top for this:





1 1/2 C each: gravy, dressing, broth, mashed taters, chopped turkey


1/2 of an onion cut up as you please.


Doubles well


Place in crockpot %26amp; let cook 4-6 hours on low.


I suggest adding in shredded or chopped carrots for color. Celery would be OK too.


Great with bread or rolls to sop up all the goodness :)


It comes out very thick.





Turkey %26amp; dumplings


Follow the recipe above, adding a lot of broth (or water) in %26amp; make your dumplinlgs as you do (either home made or throw your cut up canned biscuits in 30 minutes before serving)





Turkey N stuffing bake - I recommend stove top for this recipe


3 C prepared stuffing


2 3/4 oz fried onions





1 can cream of celery


3/4 C milk


1 1/2 C cooked tukey


'10 oz peas, thawed





Combine stuffing %26amp; half can onions. Spoon mixture into a shallow 9'; baking dish. Press mixture to form a shell along bottom %26amp; sides of pan. Combine cream of soup, milk, turkey %26amp; peas, pour into stuffing shell. Bake covered 350 F for 30 minutes. Top with remaining onions. Bake uncovered 5 minutes longer.





TURKEY 'N STUFFING BAKE MODIFIED ~


3 C prepared stuffing


2 3/4 oz fried onions





Leftover green bean casserole


1 1/2 C cooked tukey





Combine stuffing %26amp; half can onions. Spoon mixture into a shallow 9'; baking dish. Press mixture to form a shell along bottom %26amp; sides of pan. Combine leftover casserole %26amp; turkey, pour into stuffing shell. Bake covered 350 F for 30 minutes. Top with remaining onions. Bake uncovered 5 minutes longer.





THANKSGIVING WRAP


Slice leftover turkey. Spread tortilla with leftover dressing, and a layer of sliced turkey, then wrap it up.





TORTILLA TURKEY STACKS


2 7-inch flour tortillas


3/4 cup chopped cooked turkey or chicken


1 tablespoon bottled fat-free Thousand Island salad dressing


1 TB bottled chunky salsa


1-1/2 ts thinly sliced green onion


1/2 C canned vegetarian refried beans


1-1/2 C shredded lettuce


1/2 of a medium tomato, chopped


1/4 C shredded reduced-fat Monterey Jack cheese or reduced-fat Colby and Monterey Jack cheese





1. Place tortillas in a single layer on a baking sheet. Bake in a 350 degree F oven for 10 to 12 minutes or until crisp and light brown. (If tortillas puff during baking, pierce with a fork to allow steam to escape.)





2. Meanwhile, in a medium bowl combine turkey, salad dressing, salsa, and green onion. Set aside.





3. To assemble, spread about 1/4 cup of the refried beans over each tortilla. Top with turkey mixture, lettuce, tomato, and cheese. Makes 2 servings.


*I think this would be good with some sour cream %26amp; I used black olives this year. Was a hit!!





What are some good recipes that use leftover Thanksgiving turkey?
Turkey Soup is great. It's a soup that tastes like thanksgiving dinner!


I just shred the leftover turkey, add some chicken broth and corn. Then I thicken it with turkey gravy and/or instant potato flakes. You can add whatever else you want. Sometimes I add green beans, carrots, or chopped jalapenos for a little kick! It freezes well and is great for cold days!



I SERIOUSLY WISH I KNEW I AM GOING TO KEEP AN EYE ON YOURS SO I CAN FIGURE MINE OUT AS WELL.
