Marshmallow Brownies








i make them every year for thanksgiving, they are sooo good!














INGREDIENTS





1 cup butterscotch chips


1/2 cup butter


1 1/2 cups all-purpose flour


2/3 cup packed brown sugar


2 teaspoons baking powder


1/2 teaspoon salt


1 teaspoon vanilla extract


2 eggs


2 cups miniature marshmallows


2 cups milk chocolate chips





DIRECTIONS





1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking pan.





2. Melt butterscotch morsels and margarine in a large bowl in microwave. Stir the mixture well and let it cool to lukewarm.





3. While the liquid mixture is cooling, mix flour, brown sugar, baking powder, salt, vanilla, and eggs into the butterscotch mixture; mix well. Fold in marshmallows and chocolate morsels.





4. Spread batter into a lightly greased 9x13 inch pan.





5. Bake 25 minutes. Be careful not to overcook.Anybody have and good Thanksgiving recipes to share?

I just tried a new cake that I really love. You need spice cake mix (and all of the ingredients listed on the box), a can of pumpkin (not pumpkin pie filling, just pumpkin), and 3 eggs. All you have to do is follow the instructions to make the spice cake and add the extra ingredients. It really tastes SO good.

Pumpkin Roll








3 eggs


1 c. sugar


2/3 c. pumpkin


1 tsp. lemon juice


戮 c. self rising flour


2 tsp. cinnamon


1 tsp. ginger


陆 tsp. nutmeg


1 tsp. vanilla





Beat eggs for 5 minutes (This is important to make cake turn out right). Fold in sugar and beat. Add pumpkin and lemon juice and beat well again. Add dry ingredients and flavorings and mix well. Pour into shallow cookie pan and bake at 350 degrees for 15 minutes. Remove from oven and turn out onto waxed paper. Roll into roll around waxed paper. Cool completely then unroll and fill with the following:





FILLING:





1 c. powered sugar


陆 stick margarine


2-3 oz. packages of cream cheese


1 tsp. Vanilla





Mix well and spread even over entire unrolled cake. Reroll, leaving off waxed paper
The pumpkin roll is wonderful. We've always enjoyed simple foods so here's a few recipes we make.





Baked Corn


2 cans creamed style corn


1 sleeve crushed crackers (saltines)


1 egg


salt %26amp; pepper to taste.


Mix all together in a baking dish, add a few pats of butter on top and bake at 350 for 30 mins or so until browned





Baked mac and Cheese


3 kinds of cheese (cheeder, colby.. any kind you like) I buy the 8 ounce blocks and cube it


3/4th box plain macaroni


1 can campbell's chedder cheese soup





Cook macaroni then put in a baking dish


add the cubed cheese and cheese soup


mix well


Spash on some milk (maybe 1/2 cup or so) and salt and pepper the top.


Bake at 350 for about 45 mins or until golden brown





Sometimes (depends on who's coming for dinner lol) we make pea salad or kidney bean salad. Just open a can of whatever you want, add diced onions, celery, diced hard boiled eggs, mayno and some pickle relish and chill.


We've had basically the same menu for the past 40 years.





Baked turkey, oyster dressing, mashed potatoes with giblet gravy, homemade noodles, baked corn, baked mac and cheese, green beans, candied yams, carrot salad, and several pies.





As long as you're with family, the food always tastes better
MY husband's granny's sweet potato casserole





3 cups sweet potatoes mashed


1/2 stick butter


1 cup rasins


1/2 cup sugar


1 tsp cinnamon


1/4 tsp nutmeg


1/4 tsp ground clove


1/4 tsp allspice


2 eggs beaten





mix all together and pour into casserole dish


top with


Crumb topping





1/ 4 cup butter


1/2 cup flour


1 cup brown sugar


1 cup chopped pecans





bake with the rest of your goodies until it's hot about 30 minutes
