TURKEY GUMBO CARIBEAN STYLE, TAKE THE TURKEY BONES AND BOIL,IF ANY LEFTOVER MEAT SLICE 2 CUPS,OF MEAT,TAKE OUT THE BONES,CLEAN OUT THE REST OF MEAT NOW,CHOP 1 ONION, 3 CLOVES OF GARLIC,CILANTRO,SAUTE IN A LITTLE OIL ADD TO STOCK ,1 CAN OF TOMATO SAUCE,SALT, PEPPER,PIEMENTO OLIVES AND SOME CAPERS, ADD 3 CUPS OF COOKED RICE AND SIMMER FOR 20 MINUTES ,NAMASTE
Turkey Pot Pie with Cornbread Topping





INGREDIENTS:





鈥? can cream of mushroom soup, undiluted (approximately 10.5 ounces)


鈥? cup milk


鈥? cup frozen peas, cooked


鈥? tablespoon chopped pimiento


鈥? cups cubed cooked turkey


鈥?/4 cup sifted all-purpose flour


鈥?/4 cup cornmeal


鈥? teaspoons baking powder


鈥?/4 teaspoon salt


鈥?/4 cup shortening


鈥? egg, lightly beaten


鈥?/4 cup milk





PREPARATION:


In a saucepan over medium-low heat, heat soup, milk, peas, pimiento, and turkey. Transfer to shallow 2-quart baking dish. Mix together flour, cornmeal, baking powder, and salt; cut in shortening. Mix egg and milk together; add to dry ingredients; mix well with a fork. Pour over turkey mixture. Bake at 425掳 for 20 to 25 minutes.


Serves 4.





Turkey Supreme





Here's an easy sauce for leftover turkey. Serve over noodles or rice. You can add pimiento or cooked peas or carrots to the sauce for more flavor and color.





INGREDIENTS:


鈥?/4 cup butter


鈥?/4 cup flour


鈥? cup hot chicken broth


鈥?/2 teaspoon salt


鈥ash pepper


鈥? cup half-and-half


鈥liced turkey breast, about 12 to 16 ounces


鈥ooked rice or noodles


鈥? to 2 tablespoons chopped toasted* almonds





PREPARATION:


Melt butter in a saucepan over low heat; add flour, stirring until smooth. Pour hot chicken broth into the flour mixture and stir until smooth. Add salt and pepper. Heat half-and-half in a separate saucepan or in microwave, then add to the thickened sauce.





Cook over low heat for 10 minutes, stirring constantly. Serve sauce hot over sliced turkey breast and rice or noodles. Sprinkle with toasted chopped almonds if desired.


Serves 4.





*To toast nuts, spread out in a single layer on a baking sheet. Toast in a 350掳 oven, stirring occasionally, for 10 to 15 minutes. Or, toast in an ungreased skillet over medium heat, stirring, until golden brown and aromatic
Honestly, my absolute favorite thing to eat leftover turkey as is a sandwich...a couple slices on bread with mayo %26amp; lettuce...delicious...then leftover pumpkin pie for dessert :P
This is a Rachael Ray recipe we use all the time, but it's especially good at Thanksgiving time to get rid of all that extra turkey! And it tastes good too :)





Turkey Corn Chili





1 tablespoon (1 turn around the pan in a slow stream) extra-virgin olive oil


1 medium onion, chopped


1 large bell pepper, red or green, chopped (use up leftover pepper strips from crudite tray if you have them)


1 jalapeno pepper, seeded and chopped


1 bay leaf, fresh or dried


1 1/2 pounds light and dark meat cooked turkey meat, diced


1 1/2 to 2 tablespoons (a palm full) chili powder


1 1/2 to 2 tablespoons (a palm full) ground cumin


1 teaspoon to 2 teaspoons (several drops) cayenne pepper sauce


Coarse salt


2 cups frozen corn kernels or leftover prepared corn


1 (32-ounce) can chunky style crushed tomatoes


2 cups prepared chicken stock or broth, paper container or canned


2 scallions, white and greens, chopped





Heat a deep pot over medium high heat. Work close to the stove for your chopping. Add oil to your pot, 1 turn of the pan, and add vegetables as you chop them.


Add bay leaf and cook vegetables 5 minutes, stirring frequently, reducing heat if veggies start to stick. Stir in diced turkey meat and season with chili powder, cumin, and cayenne sauce. Season with a little salt, to taste. Add corn, tomatoes, and broth. Combine your chili well, adjust seasonings, reduce heat to medium low, and simmer for 7 to 10 minutes. Garnish chili with chopped scallions.
You could always do a turkey pot pie (instead of chicken) and use the leftover turkey, some cream of chicken or mushroom soup, and then the leftover fresh veggies.
I usually chop up in the turkey in little cubes and add cream of mushroom soup and add celery and onions and makes a great creamed turkey open face sandwich . yummy . good luck and god bless.
Sweet Potatoe Spice Cake


1 pkg, yellow cake mix


3 eggs


1/4 cup oil


1 cup apple juice


1 tsb pumpkin pie spice


1 cup mashed sweet potatoes


1/2 cup raisins


1/2 cup chopped walnuts


Preheat oven to 350 degrees F. Coat 2 (9';) cake pans with cooking spray. On low speed, beat cake mix, eggs, oil, apple juice and pumpkin pie spice; beat in sweet potatoes until blended. On med-high, beat 2 minutes. Stir in raisins and walnuts. Bake 25-30 minutes or until a toothpick comes out clean. Cool 5 mintues and remove to rack to cool.


Frosting


2 cups unsalted butter, softened


1 jar (1 lb) Marshmallow Fluff


1 pkg (1 lb) confectioner's sugar


1 tsp. vanilla extract


On med-high beat butter until fluffy, about 2 minutes. Add fluff; beat 30 seconds. Gradually beat in confectioner's sugar and vanilla until combined. On hed-high, beat 1 minute.





My family likes this cake with cream cheese frosting better.

The Ultimate Leftover Turkey Sandwich





2 slices multigrain bread


1 Tbsp. MIRACLE WHIP Dressing


3 oz. oven-roasted turkey breast, sliced, or shredded cooked turkey


1/2 cup prepared STOVE TOP Stuffing Mix for Turkey


2 Tbsp. cranberry sauce





SPREAD 1 of the bread slices with dressing.


TOP with turkey, stuffing, cranberry sauce and second bread slice.





if you have any leftover gravy it gets even better:)
