Thanksgiving recipes?

What are your favorite (and easy) Thanksgiving recipes? This is my first married Thanksgiving and dinner will be held at my house. I want to make it delicious! I am an average cook so nothing too outrageous please! Also, how do you keep the turkey from drying out? What are some good rubs or seasonings for it? The turkey is almost 21 pounds and for the amount of time it will take to bake I do not see how it won't go dry. Feel free to include desserts! Thanks so much!





Also, I need some good appetizer recipes.Thanksgiving recipes?
Use a roasting bag to prevent the turkey from drying out. Also, do not over cook the turkey as this can dry out the meat. Follow the directions given on the roasting bag box or go to www.butterball.com for lots of Thanksgiving advice.





Cranberry Sauce








1 cup sugar


1 cup water


12 ounces cranberries








Mix sugar and water until dissolved. Bring to a boil and add cranberries.


Bring mixture to a boil and then reduce heat. Boil gently for 10 minutes,


stirring occasionally, let cool at room temperature and then refrigerate.


Makes 2 1/4 cups.

Do-ahead Garlic Mashed Potatoes





3 lbs. potatoes (about 9 medium), peeled and cut into pieces


6 cloves garlic, peeled


戮 cup milk


陆 cup whipping (heavy) cream


陆 cup butter or margarine


1 teaspoon salt


Dash of pepper








1. In 3-quart saucepan, mix potatoes and garlic; add enough water (salted if desired) to cover. Cover and heat to boiling; reduce heat. Simmer covered 20 to 25 minutes or until tender; drain. Shake pan with potatoes over low heat to dry. Mash potatoes and garlic in pan with potato masher or electric mixer until no lumps remain.





2. In 1-quart saucepan, heat milk, whipping cream, butter, salt and pepper over medium-low heat, stirring occasionally, until butter is melted; reserve and refrigerate 1/4 cup mixture. Add remaining milk mixture in small amounts to potatoes, mashing after each addition, until potatoes are light and fluffy. (Amount of milk needed to make potatoes smooth and fluffy depends on kind of potatoes used.)





3. Grease 2-quart casserole. Spoon potatoes into casserole; cover and refrigerate up to 24 hours.





4. Heat oven to 350脗潞F. Pour reserved milk mixture over potatoes. Bake uncovered 40 to 45 minutes or until hot. Stir potatoes before serving.

Green Beans Almondine








9 ounces french-style green beans


录 cup slivered almonds, blanched


2 tablespoons minced onion


2 tablespoons butter








Saute slivered almonds and minced onion in butter. Toss lightly with


cooked green beans. Serves 4.

Impossibly Easy Pumpkin Pie








1 cup canned pumpkin (not pumpkin pie mix)


陆 cup Original Bisquick脝 mix


陆 cup sugar


1 cup evaporated milk


1 tablespoon butter or margarine, softened


1 陆 teaspoons pumpkin pie spice


1 teaspoon vanilla


2 eggs


Whipped topping, if desired








1.Heat oven to 350鈭獸. Grease 9-inch pie plate.





2.Stir all ingredients except whipped topping until blended. Pour into pie plate.





3.Bake 35 to 40 minutes or until knife inserted in center comes out clean. Cool 30 minutes. Refrigerate about 3 hours or until chilled. Serve with whipped topping. Store covered in refrigerator.





High Altitude (3500-6500 ft) Bake about 55 minutes.

Health Twist

For a festive presentation, sprinkle the plate with ground cinnamon. Top the pie with frozen (thawed) whipped topping and a cinnamon stick.





Substitution





If you don't have pumpkin pie spice on hand, use 1/2 teaspoon each of ground cinnamon, ground nutmeg and ground ginger

Quick and easy side dish: Spaghetti squash





Ingredients:


1 spaghetti squash (1-2 lbs)


8 oz freshly grated parmesan cheese


1/2 to 1 full stick butter (depends on how naughty you feel)


Freshly ground pepper to taste





Using a knife, split squash in half lengthwise. Scrape out the seeds and pulp using a spoon as you would a pumpkin and discard. Microwave each half separately on a plate, inside facing down for 10-15 minutes until cooked through. Using a fork, scrape the insides of the squash into a bowl, pulling away the spaghetti like filaments. Add butter and cheese. Stir to combine. Add pepper to taste.





As far as the turkey, use a Reynold's turkey sized oven bag. Just follow the directions enclosed with the bags. It will take about 3 hours to cook (roughly) and will turn out very moist. Additionally, you'll have a lot of drippings for use in making turkey gravy or noodles.
Bread Balls


2 cups chopped onion


1 cup chopped celery


1 cup butter or marg.


1/2 cup chopped parsley


1 Tbs. poultry seasoning


1 tsp. salt


1/2 tsp. pepper


12 cups dried bread cubes


1 cup milk


2 eggs slightly beaten


1/2 to one cup chicken broth


Saute onion, celery and butter for 10 mins. Stir in seasonings %26amp; remove from heat. Mix into bread cubes Combine milk and eggs and big in with bread cubes and seasonings. Shape into balls about the size of a lemon. Place in greased baking dish Pour broth over the balls and bake for about 25 mins. Enjoy with gravy!


I have to make a double batch to keep everyone happy!



Put some water in the bottom of the roasting pan.





Get a load of aluminum foil. Wrap the turkey in the foil, layers of it, nice and tight until you feel confident there is no air getting in. I wrap in around one way and then around the opposite way, like making T's, a few times each. Bake it on a low heat for longer, not too high, but high enough for safely coooking the turkey. I do mine at 350 C





Then for the last hour and a half or so, take off the tinfoil to brown the bird. Allow all the drippings from the bag to go into the water in the roaster. Set the turkey in the water. Baste it every 10 mins to be really on top of it. I just use a big soup ladel to do mine, but you can use a turkey baster, using the water and drippings from the bottom. Make the turkey glisten wet each time.

Corn casserole is one of my favorite sides.

1 egg


1cup sour cream


1 stick butter (melted)


1 can drained whole kernel corn


1 can cream style corn


1 8 1/2 oz pkg cornbread





Beat egg, stir in sour cream, butter, both corns and cornbread mix in that order.


Pour into greased pan (8x12)


bake at 350 degrees for 45 minutes.





Very easy and yummy!





If you pour a can of Dr. Pepper over your turkey that helps it not get so dry.. actualy for a large turkey.. just pour 2-3 cans of dr. pepper over the turkey and let it stay in the pan while cooking.


Rub butter all over it and even add some to the inside.

- 4 to 6 eggs


- 1 heaping tablespoons of mayo %26amp; miracle whip


- 1/2 tablespoon of yellow %26amp; dijon mustard


- 1-3 tablespoons of vinegar


- pinch of sugar


- sprinkle salt, pepper (optional: paprika)





boil eggs for about 12 min and slice and scoop out the yolk. smash the yolk up in a bowl with a fork %26amp; add mayo %26amp; miracle whip. then add mustards, sugar and vinegar. scoop the mix back into the egg cavities and then sprinkle with salt, pepper (optional: paprika)

2 cups of canned pumpkin


-4 eggs


-1 cup of oil


-2/3 cup of water


-3-1/2 cups of flour


-3 cups of sugar


-3 tsp of cinnamon


-3 tsp of nutmeg


-2 tsp of baking soda


-1-1/2 tsp of salt





Sift dry ingredients together, then add oil. Make a well and add the rest of the ingredients, then stir until completely mixed. Pour into two large greased loaf pans (or three smaller ones). Bake for one hour at 350 degrees.

I'm kind of a food network junkie and I happened to come across this in one of Alton Brown's shows this past week. He tells you step by step how to cook a turkey...his advice was that slow roasting a turkey (getting up at 4am to start it lol) is what dries the bird out. Just have a look at his method and see if it's something you'd be interested in, it was one of the fastest AND easiest methods I've seen.

-buy fresh cranberrys and oranges


-put in grinder a hand full at a time puting in orange slices every so often


-after you are pleases with amount add sugar (it is very sour without)


-refridgerate then enjoy
JIFFY CORN CASSEROLE





1 can whole kernel yellow corn, undrained


1 can cream style yellow corn


1 (8 oz.) carton sour cream


2 eggs, beaten


1 box Jiffy corn muffin mix


1 stick butter, melted





Mix all together and pour into large, lightly oiled casserole dish. Bake at 350 degrees for 55 to 60 minutes.








BROCCOLI RICE AND CHEESE CASSEROLE





1 medium onion, finely chopped


2 10oz pkgs of frozen broccoli, cooked and drained


1 stick of butter


2 can cream of chicken soup


6 cups of wild rice


1 clove of garlic


3 cups of shredded cheese, your favorite





Preheat oven to 350掳F.





In a skillet melt the stick of butter. Saut茅 onion and garlic, until onions are tender. Set aside to cool.





Steam the frozen broccoli until thawed, then drain well. Let cool.





Cook wild rice according to directions. (Use any type of rice desired; wild rice is exceptionally good in this recipe).





It is important to allow the warm ingredients to cool before mixing everything together so the cheese doesn't melt too soon.





When sufficiently cool, reserve 1/2 cup of the cheese and mix remaining ingredients together. Put in a oven-proof baking dish or casserole dish (or 2 if needed).





Spread reserved 1/2 cup of cheese on top. Cover with foil.





Bake for 20 minutes, remove foil; bake an additional 5 to 15 minutes, or until cheese on top is hot and bubbly.





Make approx 12 servings, recipe can be cut in half.





LOADED MASHED POTATOES





8 large baking potatoes


1 bag shredded Colby cheese


1 jar sour cream


1 package of bacon


5 fresh green onions


8 tsp. butter





Wash potatoes to remove any dirt and/or pesticides. Wrap baking potatoes in aluminum foil and place onto a baking rack at least 1 inch apart. Bake on low for about 1 hour or until potatoes have a soft inside.


Remove aluminum foil and slice potatoes in half. Scoop out the inside of the potato into a large bowl and discard skins. Mash the potatoes in bowl with 8 tsp. butter. Place cheese, bacon, and chopped green onions into the bowl and mix.





Spray a casserole dish and with non-stick cooking oil and scoop the potatoes into the dish. Place extra cheese on top of the potatoes and heat at 350掳F for 5 minutes or until cheese is melted. Eat and enjoy.












Well, first for the turkey. I would have to say my husband and I haven't had a dry turkey in almost 5 years. We normally thaw out the turkey about 2 days before, and then the day before, we will either buy or make a broth and 'shoot' the turkey up - you can get the mix and injector at the local grocery store. Or if you make your own, use chicken broth, real butter melted, and whatever herbs and seasonings you like. Garlic, white pepper, cumin, parsley flakes, rosemary, and salt. Be sure to have this fine ground before mixing in with the broth and butter, too many big pieces can plug up the injector. I would say about a Tablespoon of each, except the white pepper, only go with a tsp - unless you like it a little more spicy. Then for the rub, use the same dry spices, and rub all over the turkey (remove the neck and innards and use those for either gibblet gravey, or boil to use in the stuffing) Once it is rubbed and injected, wrap tightly in saran wrap (takes two people), and then store in a cooler with ice to 'brew' overnight. We have one of those big roasters (has been a blessing for big family meals - free's up your oven for other stuff). Start about 9 in the am the next day (or depending on what time your family officially gathers to 'throw down'. For cooking times, usually @ 350 degrees, your turkey should be just done in about 3.5 or 4 hours -BUT I would use a meat thermometer and check for doneness in the breast and in the thigh, as they cook differently. One of my favorite dishes to make is fried sweet potatoes - peel the sweet potatoes, then using your food processor, slice like you would for regular fried tators, I use a large electric skillet, and using real butter, one stick to start, @ 400 degrees, melt the butter and toss in the sweet potato slices, cook for about 5 minutes, then add in 1/4 to 1/2 cup brown sugar, (depends on how sweet you like your tators), 1 T vanilla extract, and kosher salt to taste - about 1 to 2 tsp. Flip as you would fried potatoes till brown sugar is mixed, may need to add another 1/2 stick if the potatoes appear dry. Cover with lid and let cook until the slices are done, flipping occasionally. Each electric skillet is different, mine cooks slower so I don't have to flip as often. When done, you can put in a retangular baking dish sprayed with non-stick spray, cover with aluminum foil and place in the oven until ready to serve. You can add mini marshmallows while still in the oven, a few minutes before serving to garnish.
