I need a Thanksgiving dessert recipe for my diabetic dad that actually tastes good?

I'm hosting Thanksgiving this year, and am looking for a diabetic-friendly dessert recipe that does not taste like cardboard. The ones I've tried so far have been very bland and boring. It does not have to be easy. I generally make everything from scratch.

Thanks for your help!I need a Thanksgiving dessert recipe for my diabetic dad that actually tastes good?

Cheryl B covered most of what I was going to say but all the Diabetics I know that love the Splenda pumpkin pie don't use a crust since flour is a problem for a lot of diabetics.

If you really want it to have a crust, try coconut flour made by Bob's Red Mill. It doesn't impact the blood sugar like wheat does. Some local grocery stores carry the Bob's Red Mill products and can order it for you if they don't have it. I know we are getting close to Thanksgiving but our local Fred Meyer store ordered it for me and I had it in less than a week.
http://www.kraftfoods.com/jello/recipe.a鈥?/a> These are recipes made with sugar free jello pudding. http://www.cdkitchen.com/recipes/recs/19鈥?/a> Here is one with pumpkin as well.
I got a really good pumpkin pie recipe from the kraft website it uses pudding and cool whip instead of sugar and eggs.

You take the sugar free vanilla pudding (two boxes) add one cup of milk and then mix in the can of pumpkin pie mix and half of the cool whip. You cook it for about a half hour. When it's cool top it with the rest of the cool whip and serve.
The splenda website is great. I use it a lot. Here is a Pumpkin Pie recipe. There are several others too, if this one doesn't work for you.

Sugar Free Puddings, Sugar Free Pies. Pumpkin Pie

Call the nearest Old folks home, They have alot of diabetics and him sure their chef wouldnt mind giving you ideas.
My dad was diabetic and every year I made him a sugar free pumkin pie. He loved it...in fact most people ate it too even though they didn't have to.

I suggest going to the Equal website, it was an Equal Pumpkin Pie recipe that I used. IF you can't find it...e-mail me and I'll send you some recipes. (My dad is gone now so I'd love to share them with someone who's dad could enjoy them) I also have a great peach cobbler recipe I modified myself to make for him...along with other recipes... A lot was hit and miss, but I worked with it so he could enjoy the holidays too as he was always a sweet lover but once he became diabetic he could only eat sugar free items.

They have tons of Thanksgiving recipes!

We too go my parents. I usually do the ham, bring the green bean casserole, the sweet potatoes (easy, get a can, cut them into bite size pieces, a few pats of real butter on top, a couple handfuls of brown sugar and top with marshmallows, all in a casserole dish), I make a carmel/apple pie and usually my fudge. Oh and deviled eggs (also easy, boil your eggs, peel when cool, cut in half putting the yolks in a big bowl and the egg whites on a tray. Smash the egg yolks, a food processor works great, add mayo or miracle whip, prepared mustard, salt and pepper, just keep tasting until it is how you want it. Put that yolk mixture in a piping bag or a plastic sandwich bag with a tip cut off and pipe into the egg white halfs. This always goes over great!)

OK, this is a HUGE answer for me, because with these two points I go to Level 6! Thanks!Thanksgiving recipe ideas?

There is a fantastic recipe on CookingLight.com for quinoa stuffing (Link: http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe%26amp;recipe_id=1545726 ). IT is just amazing and everyone there will love it. To be vegan friendly, you have to use vegetable broth and earth balance in place of the butter. This has become a staple in our house where I am the only vegan...

If you do a google search for vegan pumpkin pie, recipes abound. Just make sure if you buy a pre-made crust, that none of the ingredients came from animals. I would do this by phone with the brother or his girlfriend if I was you...It is always nice to be included in dessert...Help...I need recipes or links for Vegan thanksgiving meals?

What recipes are your kids favorite at Thanksgiving?

I have one kid who LOVES green bean casserole (ick, yuk, patooie!) but I make it for her......I'm a scratch cook/baker so opening a can KILLS ME but for her, I do it,lol....

I have four kids..counting the hubby, five....and they all suck down faster than a Hoover on steriods...along with the dreaded green bean casserole.....

Turkey, sausage, fruit (cranberries %26amp; apples) %26amp; herb stuffing(my family's recipe), gravy, 'smashed' potaotes, sweet potatoes casserole, sweet corn, corn bread, buttermilk biscuits, home made rye bread, cranberry sauce, carrots, turnips or roasted acorn squash, 'punkin' pie, apple pie, gingerbread cookies.

I do it all from scratch...except the green bean casserole-my one lone sacrifice for my child..lol Happy Turkey Day.What recipes are your kids favorite at Thanksgiving?
Pink Sh!t. My sister, bless her sole, makes the worse cranberry sauce in the world. It has whole cranberries, nuts and horseradish in it! After three years, I was asked to tell her how we make fun of her making this. She knows, but mom likes it. She makes it and knows that it's a complete waste of time and money. So, now any newcomer at the table just HAS to try the Pink Sh!t, then we all have a good laugh.

No one eats it, but we all laugh about it. It's got to be the best recipe in the world to bring family together like that, even tho it sucks to eat it. What recipes are your kids favorite at Thanksgiving?
I guess I am a kid...I'm almost 17, but all the younger kids seem to like this homemade pumpkin bread that I prepare. I remember my younger cousins feeling grossed out at the thought of eating canned pumpkin, but when they tasted the bread they couldn't believe that it was so good!
well, we usually go out ot eat. No fuss, no mess and no leftovers.

BUT, the bird,of course.

since u didnt ask MOM's fave, I'll tell u anyways: Pecan pie with vanilla cool whip! If I had that all year, i would be supremly happy! )
Don't have kids, but how about replicating what the pilgrims, and Native Americans ate during the First Thanksgiving? For recipes see

I have two boys. They like to eat the turkey ( my oldest son calls it chicken for some odd reason) mashed potato with gravy and dinner rolls. and sweets they can have after wards has well.
Twice Baked Potatoes, Stuffing Balls, Raisin Bread Pudding, and mom's homemade fudge
if my son could eat nothing but the stuffing and gravy, he'd be happy all year.

Since you've already got lots of great ideas for reception food, I'll throw this out-- why don't you have a nice dinner out with your parents instead of cooking it yourself. Or, have a brunch Thanksgiving meal late morning-midday. You could incorporate some traditional Thanksgiving components into the meal-- like turkey sausage (the gourmet/specialty kind, not the kind people get because it's healthier), pumpkin bread (maybe even make french toast with it), maybe a cranberry cocktail if you're drinkers.

Good luck. It sounds like a busy and potentially very fun day.
    This is soooooo easy:

Combine 1 jar of grape jelly and 1 jar of chili sauce (This comes in a jar like ketchup NOT hot dog chili!)

    Stir well.

Add several packages of Little Smokies (small smoked sausages)

    Heat thoroughly

    Yummy!

But are you sure you have to cook Thanksgiving dinner?????

Maybe you can do dinner on the weekend before or after. I don't know about you, but I could never fix food for a wedding reception and cook TG dinner on the same day!!

You can also make little pumpkin tarts, a bit more work involved.

Buy tiny tart shells already made. Cream cheese and sugar mixture in the bottom, canned pumpkin %26amp; Coolwhip mixture on top. Top w whipped topping and sprinkle w cinnimon. They are pretty and very fall looking.

A wedding on Thanksgiving? A day when people like to be with their families, eat turkey, relax and the guys watch football? The anniversary is not going to have it's own special day? So later when they have kids and such ddoing the traditional thanksgiving a romantic celebration for the anniversary is out the window. I suppose its arranged at this point. I just can't believe that some people don't think things through. Just a thought. Anyway keep it simple as its thanksgiving. Deviled eggs, sausage rolls, etc. always go over.
Here are a couple of my family's favorites:

    Chicken/Bacon Wraps

Buy the fajita meat that comes prepackaged. Cut off excess fat, and cut into bite size pieces (raw). Cut a package of bacon in half. Wrap each bite of chicken with half a strip of bacon, and one almond. Bake for one hour on 350. It may smoke a lot, so be prepared. Serve with a honey mustard.

    Cream Cheese Dip

Buy a stick of cream cheese. (looks more like a block really). Cut in half length wise, and then cut across making several pats of cream cheese. Pour over this half a cup each of worcestire sauce and soy sauce. Top with green onion. Serve with Triscuits.

    Salmon Wheels

Buy smoked salmon. Smear cream cheese and roll up. cut into bite size wheels and serve just like that or with mini bagels.

    Stuffed Jalapenos or Mushrooms

Cut up bacon into tiny slices and fry up, drain.. mix with a cup of mayo and a package of shredded cheddar cheese, and a can of water chestnuts. Buy a can of jalapenos. Stuff jalapenos with mixture and serve.

    Another Stuffing

Buy frozen cocktail shrimp. Thaw and mix with cream cheese, green onion, a package of hidden valley ranch dressing MIX.. not the liquid. It's okay to shred up the shrimp. Stuff this mixture in either jalapenos or mushroom caps and heat in oven til warm.

Spinach Dip served in King's Hawaiian Round Bread is awesome and easy. The recipe is on the package of Knorr's Vegetable Soup.

    Hope some of that helps!
Just bring a bunch of Slim Jims, that'll teach these idiots not to ruin your Thanksgiving Day again
whats the budget for this reception. I just came from a really nice wedding where they had like a tea party finger food theme for the reception. They had a bunch of cold salads, shrimp cocktail and all these things made with Filo dough. They had cheese balls, crab puffs, pigs in a blanket, a huge fresh fruit display pineapple chunks, mango slivers, chocolate covered strawberries, seasonal fruits and even a little filo cups with a fruit compote and mini chocolate teramisu.

You could make this double layer pumpkin pie. It's sooo good and easy to make, but looks impressive.

4 oz. (1/2 of 8-oz. pkg.) Cream Cheese, softened

    1 Tbsp. milk

    1 Tbsp. sugar

1 tub (8 oz.) Whipped Topping, thawed, divided

1 Graham Pie Crust (6 oz.)

    1 cup milk

    1 can (15 oz.) pumpkin

2 pkg. (4-serving size each) Vanilla Flavor Instant Pudding %26amp; Pie Filling

    1 tsp. ground cinnamon

    1/2 tsp. ground ginger

    1/4 tsp. ground cloves

Mix cream cheese, 1 Tbsp. milk and the sugar in large bowl with wire whisk until well blended. Gently stir in half of the whipped topping. Spread onto bottom of crust.

Pour 1 cup milk into large bowl. Add pumpkin, dry pudding mixes and spices. Beat with wire whisk 2 min. or until well blended. (Mixture will be thick.) Spread over cream cheese layer.

Refrigerate 4 hours or until set. Top with remaining whipped topping just before serving. Store leftover pie in refrigerator.

I'm also going to give you a recipe for sweet potato pie, but I'll have to find the recipe for exact directions. I usually don't like sweet potato pie with the marshmallows ontop, but this just has pecans and brown sugar on top...yum!What's an awesome thanksgiving recipe that's not to expensive to make but is really impresive?
This has always been a family favorite.

    Libby's Famous Pumpkin Pie

    Ingredients:

    3/4 cup granulated sugar

    1 teaspoon ground cinnamon

    1/2 teaspoon salt

    1/2 teaspoon ground ginger

    1/4 teaspoon ground cloves

    2 large eggs

    1 can (15 oz.) LIBBY'S® 100% Pure Pumpkin

    1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk

    1 unbaked 9-inch (4-cup volume) deep-dish pie shell

    Whipped cream (optional)

    Directions:

MIX sugar, cinnamon, salt, ginger and cloves in small bowl. Beat eggs in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk.

    POUR into pie shell.

BAKE in preheated 425° F oven for 15 minutes. Reduce temperature to 350° F; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. Top with whipped cream before serving.

    NOTES:

1 3/4 teaspoons pumpkin spice may be substituted for the cinnamon, ginger and cloves; however, the taste will be slightly different. Do not freeze, as this will cause the crust to separate from the filling.

FOR 2 SHALLOW PIES: substitute two 9-inch (2-cup volume) pie shells. Bake in preheated 425° F. oven for 15 minutes. Reduce temperature to 350° F.; bake for 20 to 30 minutes or until pies test done.

FOR HIGH ALTITUDE BAKING (3,500 to 6,000 ft.): Deep-dish pie- extend second bake time to 55 to 60 minutes. Shallow pies- no change.

I made this last year and every one enjoyed it.

Bourbon Pecan Pie....the southernest of southern pies ;)

    1 cup sugar

    3 tablespoons butter, melted

    1/2 cup dark corn syrup

    3 large eggs, beaten

    1 1/2 to 2 cups pecan halves

    2 tablespoons good-quality bourbon

    1 (9-inch) deep-dish pie shell, unbaked

Preheat the oven to 375 degrees F.

In a medium bowl, stir together the sugar and melted butter. Add the corn syrup, eggs, pecans, and bourbon, and stir until all ingredients are combined. Pour mixture into an unbaked pie shell, and place on a heavy-duty cookie sheet. Bake for 10 minutes. Lower the oven temperature to 350 degrees F, and continue to bake for an additional 25 minutes, or until pie is set. Remove from oven and cool on a wire rack.

This pie never has a chance once I put it out for serving!!! People who love pecan pie love this recipe. The only thing about the time of it is that it sometimes can take longer than the 25 minutes it states. Just check it at 25 minutes and if it's still really jiggly then let it stay in there for 10 minutes increments
    corn spoon bread!

    4 cups milk

    1 1/4 cups cornmeal

    1 1/2 teaspoons salt

1 cup whole kernel corn, drained

    1/3 cup chopped green onions

    1/4 cup unsalted butter, cubed

    3 eggs

    DIRECTIONS

Preheat oven to 375 degrees F (190 degrees C). Butter one 8x8x2 inch glass baking dish. Separate the eggs.

Whisk milk, cornmeal and salt in a heavy saucepan over medium heat. Bring mixture to a boil, whisking constantly until mixture begins to thicken, about 4 minutes. Reduce heat to low and cook until the mixture is very thick, stirring frequently, about 20 minutes.

Transfer cornmeal to a large bowl. Stir in corn, green onions and butter. Add the egg yolks 1 at a time, stirring after each one.

Beat the egg whites until stiff peaks form. Fold the egg whites into the warm cornmeal mixture in two additions. Spread the batter evenly in the prepared pan.

Bake at 375 degrees F (190 degrees C) until light, puffed and golden brown, about 30 minutes. Serve immediately.

use the jiffy mix, it works best, and maybe add a little sugar.

you can figure it out when you taste it.

it should end up like a casserole version of corn bread, but more moist and enjoyable.

my mom makes it every year for thanksgiving, and its great!

there may be a recipe for it on the jiffy box.

    good luck!

Alton Brown of Good Eats in his Thanksgiving show explains the science behind cooking a turkey, and busts many myths like ';slow cooking'; and ';basting'; is good for a bird (not!).

After many years (around 25) of cooking turkeys (3 or 4 a year, usually), many recipes and experiments, I've found his advice most accurate and produces the best product.

    The recipe:

    1/3 cup minced fresh parsley

1 cooked turkey liver, finely chopped

    3/4 cup turkey stock

    4 tablespoons unsalted butter, melted

    DIRECTIONS

Preheat oven to 350 degree F (175 degree C). Spread the white and whole wheat bread cubes in a single layer on a large baking sheet. Bake for 5 to 7 minutes in the preheated oven, or until evenly toasted. Transfer toasted bread cubes to a large bowl.

In a large skillet, cook the sausage and onions over medium heat, stirring and breaking up the lumps until evenly browned. Add the celery, sage, rosemary, and thyme; cook, stirring, for 2 minutes to blend flavors.

Pour sausage mixture over bread in bowl. Mix in chopped apples, dried cranberries, parsley, and liver. Drizzle with turkey stock and melted butter, and mix lightly. Spoon into turkey to loosely fill.

I do a broccoli rice dish. It only contains 5 ingredients and is really easy to make.

    1 cup of minute rice

1 can of mushroom stems and pieces

1 can of chicken noodle soup *

1-8 oz box of chopped broccoli

    8 slices Kraft American cheese**

Cook the rice like directions on the box. Drain the mushroom stems and pieces then put it in a casserole dish and add the rice. Add the chicken noodle soup. Cook the broccoli and drain it add it to the mixture. Then put the 8 slices of cheese on top and melt it about 10 minutes in the microwave. Stir it all together well.

    * I don't use Campbell's chicken noodle soup because it makes it too watery. Get like Great Value from Walmart.

** If you use other cheese than Kraft it will make it too watery also, except if you substitute Velveeta cheese instead.

  • Does anyone have insteresting ideas for Thanksgiving side dishes? I'm looking for some unusual recipes!?

This is a really nice one that I'm making this year...a nice little twist on an old classic...

    Potato and Wild Mushroom Gratin

    6 tablespoons (3/4 stick) butter

12 ounces assorted fresh wild mushrooms, sliced

    3 pounds Yukon Gold potatoes

    1 1/2 teaspoons salt

    3/4 teaspoon ground black pepper

    2 cups heavy whipping cream

    Preparation

Preheat oven to 375°F. Melt butter in heavy large skillet over medium-high heat. Add mushrooms and sauté until brown and soft, about 6 minutes. Generously butter 11x7x2-inch baking dish. Peel and cut potatoes into 1/8-inch-thick slices. Arrange 2 layers of potatoes in prepared dish. Spoon 1/3 of mushrooms over potatoes. Sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper. Repeat 2 more times with potatoes, mushrooms, salt, and pepper. Pour cream over potatoes. Cover with foil and bake 45 minutes. (Can be made 2 hours ahead. Let stand at room temperature.) Uncover and continue baking until golden brown and set, about 20 minutes longer (30 minutes if room temperature). Let stand 10 minutes before serving.

Enjoy!Does anyone have insteresting ideas for Thanksgiving side dishes? I'm looking for some unusual recipes!?
I really like roasted vegetables. I love roasted brussels sprouts or you could do a mix of roasted root vegetables - Slice up new potatoes, sweet potatoes, turnips, parsnips, fennel bulbs, onion, shallots, carrots. Mix with melted butter or olive oil, season with salt, pepper and thyme and roast at 350 degrees for 40-50 minutes or until all vegetables are fork tender.

Epicurious has a recipe this year for a cosmopolitan cranberry sauce - made with fresh cranberries, vodka and grand marnier that I am planning to do for sure:

    http://www.epicurious.com/recipes/food/v…

I also like fennel - it is an bit unusual and tastes great sliced raw and made into a salad or roasted with onion and garlic.

Good luck with your feast!Does anyone have insteresting ideas for Thanksgiving side dishes? I'm looking for some unusual recipes!?

1-14 ¾ ounce Can Cream Style Corn

    worms!!
Broccoli Casserole (Not really a casserole.)

I'm not sure of the full recipe, but here is the basics.

Cruble up ritz crackers and cover the bottom of a casserole dish with them.

    Brush lightly with butter.

Mix the broccoli and velveta cheese and put it in the dish on top of the crackers.

Top with a light layer of the crubled crackers.

Bake until the broccoil and cheese have melted together and the crackers are toasted.

Search the internet for the exact recipe.
    stuffing
I believe this Sage Cranberry Dressing is a bit unusual as stuffing recipes go, but it is a favorite side dish as well.

Preparation time: 12-14 minutes. Serves 8-10 (Makes enough to loosely stuff a 20 pound turkey).

    Ingredients:

    1 1/2 cups diced celery

    1/2 cup chopped onion

    1/4 cup butter

1 1/2 quarts dried cubed bread (for cornbread dressing, substitute cornbread for all or part of the bread in the recipe)

    1 teaspoon of salt

    1/2 teaspoon poultry seasoning

    1/4 teaspoon black pepper

    3/4 cup craisins (sun-dried cranberries)

    1/4 cup chopped pecans, optional

    1 cup cold chicken broth

    Instructions:

Sauté the celery and onion lightly in the butter until tender but not browned; cool

Combine the bread and cooked vegetables in a large mixing bowl

Add the herbs, craisins, pecans and seasonings

Toss gently until all ingredients are well mixed

Add the stock a little at a time and mix the dressing lightly after each addition

Add just enough stock to make the dressing slightly moist, neither dry nor soggy

    Correct seasoning

Place in a greased baking pan and bake at 375 degrees F until hot in the center (about 1 hour)

    TA-DA! That’s it!

Just another note: If you use this dressing recipe to stuff poultry instead of baking the dressing separately, fill the bird loosely. Do not pack, as the stuffing expands during cooking.

There are many other ideas if you explore the links below.

Well my younger brothers family is mexican and they make a spanish stuffing. Find a stuffing recipe and instead of bread use corn tortillas, but fry them before you cut them up. Good luck, hope every thing turns out good for you. Try replacing certain spices with spanish spices for your dishes.
puerto rican food isnt like mexican food. they do eat pork but tend to eat plantains with it.(which are kind of like bananas guess). google plantain/ pork recipes to find something. I have found that the puerto rican food tends to have fruit and not always be as spicy as mexican. But thats me.

    Pescitarian thanksgiving recipes...?

vegetarian recipes too? Yes, will be serving seafood on thanksgiving (have meat eaters coming and i think by serving seafood,i wont have to make 2 different versions of a meal, because everyone eats seafood who are coming)but other suggestions are welcome!Pescitarian thanksgiving recipes...?
Maybe if you do a platter of varied fish. That way everyone can help themselves. Some people get very 'picky' about what fish they like/dislike.

If you do a big platter of different types of fish-cod, salmon, oysters, clams, lobster, haddock, lemon sole, sardine, tuna etc.

Then in different plates/bowls on your serving table you could put potatoes, loads of varied vegetables and salad and then maybe some dressings at the end of the table.

This way, everyone gets to eat how much/how little and exactally what they like.

I don't have thanksgiving here but at Christmas and other holidays it can get a lil boring with meals just being served. I would much rather be able to make my 'own meal' by having different things to pick from.

Afterwards, you can always just make a dessert that you can serve to everyone. E.G- Peanut butter pie (satisfying and edible for vegetarians as its high in protein.)
