1 pint heavy cream


1 c. sugar


3-4 tbs. bourbon, rum, or


port wine. if you don't


want to use alcohol, try rum


flavoring.





beat cream and sugar together until moderately thick, then add alcohol or flavoring. continue beating until very thick...but still pourable. chill for an hour.





this is excellent on a gelatin dessert, on fruitcake or even on fresh fruit. keep leftovers covered and refrigerated for up to 5 days, stirring just before use.

Turkey with popcorn stuffing Submit a Recipe





BAKED STUFFED TURKEY


15-18 lb. turkey


2+1/2 cups melted butter


8 cups boxed or homemade croutons


2 cups unpopped popcorn (ORVILLE REDENBACHER'S microwavable is good).





1/2 onion cut up


3 stalks celery, chopped up into bits





Salt/pepper to taste





Preheat oven to 350 degrees. Brush turkey well with melted butter,





sprinkle on salt and pepper.





Fill cavity with stuffing and popcorn. Place in baking pan with the neck end toward the back of the oven.





Listen for the popping sounds. [This usually takes about 4 hours in a conventional oven].





When the turkey's butt blows the oven door open and the bird flies across the room, it's done.

';PUMPKIN PIE'; Creme Brulee Submit a Recipe





3 cups heavy cream


1 Tabelspoon Vanilla


12 egg yolks


11/2 cups sugar


1 tea. cinnamon


1 Tablespoon pumpkin pie spice


1 cup pumpkin puree


water


Place cream in a large sucepan. add vanilla and place on medium heat. Meanwile whisk yolks,3/4 cup sugar cinnamon,and pumpkin pie spice in a bowl. Add pumpkin puree and whisk to combine. When cream is very warm slowly add half of the cream to the pumpkin mixture as you whisk. then add the pumpkin mixture to the rest of the hot creamand keep whisking. this is tempering the egg yolks. Preheat oven to 350 degress. Divide the mixture among 6 (1cup) or 12 (1/2 cup)ramekins.Place in a oblong pan with sides at least 2 inches. and fill with hot water to come up half the way the sides of the ramekins. Bake for 45 minutes Remove from oven then remove ramekins from water.Let cool 1 hour then refrigerate. When ready to searve sprinkle each ramekin with 2 Tablespoons of sugar and use a kitchen torch to melt the sugar. This is very easy and delicious!

Cranberry Jello Salad Submit a Recipe





1 lg. pkt. sugarless Cranberry Jello


1 med. can crushed pineapple (drained, but reserve juice)


1-2 Cups walnut pieces


1 bag fresh cranberries, crushed


1 can whole cranberry sauce





Make Jello according to package directions (2 cups boiling water %26amp; 2 cups cold water - you can use part juice from pineapple or use some cranberry juice to substitute for part of the cold water). Pour Jello into a mold and when it begins to gel, add remaining ingredients %26amp; refrigerate.


A friend brought this as a pot-luck dish one year, and everyone loved it!

Turkey shepherd's pie Submit a Recipe





Leftovers from Thanksgiving:


1-Turkey-cut into bite size pieces.


2-Peas (frozen or canned)


3-Mashed sweet potaoes-you can use regular potatoes)


4-Grated cheese


5-Leftover gravy





Mix turkey and gravy together and pour into a 13x9 pan.


Add peas on top of turkey-gravy mixture.


Add mashed potatoes on top.


Sprinkle cheese on top.





Bake in a 350 deg oven for 1/2 hour to 45 minutes.


Let cool for 5-10 minutes. Cut into squares and serve. Your family will want you to make turkey more often.

Corn Casserole

1 (15 1/4-ounce) can whole kernel corn , drained


1 (14 3/4-ounce) can cream-style corn


1 (8-ounce) package corn muffin mix (recommended: Jiffy)


1 cup sour cream


1/2 cup (1 stick) butter, melted


1 to 1 1/2 cups shredded Cheddar


Preheat oven to 350 degrees F.


In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream, and melted butter. Pour into a greased 9 by 13-inch casserole dish. Bake for 45 minutes, or until golden brown. Remove from oven and top with Cheddar. Return to oven for 5 to 10 minutes, or until cheese is melted. Let stand for at least 5 minutes and then serve warm.











Hash Brown Potato Casserole





1 package of O鈥橞rien鈥檚 Potatoes


陆 cup butter


1 can cream of chicken


12 oz sour cream


8 oz sharp cheddar





Toppings: 2 cups crushed corn flakes and 录 cup margarine melted.





Mix main ingredients and place in 9 x 13 鈥?pan. Combine the crushed flakes and margarine. Sprinkle over potatoes. Bake 45minutes at 350.








Tomato Basil soup


3 28 oz cans crushed tomatoes


1 quart chicken broth


1 pint heavy whipping cream


3 Tablespoons butter


Fresh cracked black pepper to taste





Combine tomatoes and chicken broth in large stockpot. Simmer for 20-30 minutes. Add remaining ingredients and simmer gently for 10-15 minutes or until ready to serve.This soup freezes well for many months. Delicious served w/ an open-faced sandwich made by placing thinly sliced ham and cheese on top of garlic bread and baking for 15 minutes or until bubbly. Top with chopped parsley and slice into serving pieces.



Green Bean Casserole





Veggies and cheese


1 bag Cauliflower and Broccoli mix


8oz cream cheese


8oz velveeta cheese





Put in a glass container. Cut cheese into small cubes and layer around the veggies. Put in microwave until cheese is melted. Stir every so often. Simple and good.





Pink Salad


1 container of cottage cheese


1 container of cool whip


1 small box jello (any flavor I use strawberry kiwi) dry


1 bag mini marshmallows flavored or plain.


Mix together in a bowl serve cold.
Waldorf salad...


Mix chopped apples, walnuts, dried cranberries, and orange segments (optional). Dress it with mayonaise, salt, and pepper or I like store-bought slaw dressing.
