I need a Thanksgiving dessert recipe for my diabetic dad that actually tastes good?

I'm hosting Thanksgiving this year, and am looking for a diabetic-friendly dessert recipe that does not taste like cardboard. The ones I've tried so far have been very bland and boring. It does not have to be easy. I generally make everything from scratch.

DIABETIC DESSERT





1/3 c. butter, softened


1/4 c. brown sugar substitute


2 tsp. liquid sweetener or 1/3 c. Sprinkle Sweet


1 egg


1 1/3 c. flour


3 tbsp. cocoa


2 tsp. baking powder


1/2 tsp. soda


1 tsp. vanilla


1/2 c. skim milk





Combine butter, brown sugar substitute, diabetic sweetener, and egg. Beat 2 minutes at high speed. Add remaining ingredients and blend 2 minutes at low speed. Pour into 8 inch square pan and sprinkle with chopped nuts. Bake at 350 degrees for 25 to 30 minutes. Frost with diabetic whip, if desired.





DIABETIC KEY LIME PIE





1 (13 oz.) can evaporated skim milk


2 tsp. vanilla


2 env. plain gelatin


1/3 c. lime juice, strain if fresh


1 c. boiling water


20 pkgs. Equal


Zest of 3 limes, grated rind


Green food coloring





Combine milk and vanilla. Freeze for 30 minutes. Combine gelatin and juice in a blender. Let set for 1 minute. Add boiling water and Equal; blend until smooth. Chill about 45 minutes. Put frozen milk into a small chilled bowl and whip frozen milk until stiff. Fold in lime zest. Slowly add the gelatin mixture to whipped milk. Spoon into 2 cooked pie shells or you may use a 9 x 13 inch baking dish. Garnish with lime slices and zest.I need a Thanksgiving dessert recipe for my diabetic dad that actually tastes good?
Cheryl B covered most of what I was going to say but all the Diabetics I know that love the Splenda pumpkin pie don't use a crust since flour is a problem for a lot of diabetics.





If you really want it to have a crust, try coconut flour made by Bob's Red Mill. It doesn't impact the blood sugar like wheat does. Some local grocery stores carry the Bob's Red Mill products and can order it for you if they don't have it. I know we are getting close to Thanksgiving but our local Fred Meyer store ordered it for me and I had it in less than a week.

I got a really good pumpkin pie recipe from the kraft website it uses pudding and cool whip instead of sugar and eggs.


You take the sugar free vanilla pudding (two boxes) add one cup of milk and then mix in the can of pumpkin pie mix and half of the cool whip. You cook it for about a half hour. When it's cool top it with the rest of the cool whip and serve.
The splenda website is great. I use it a lot. Here is a Pumpkin Pie recipe. There are several others too, if this one doesn't work for you.





The Great Pumpkin Pumpkin Pie Serves: 8


Preparation Time: 10 Minutes


Cooking Time: 1 Hour


Total Time: 1 Hour 10 Minutes





What you need:


1/2 (15 ounce) package refrigerated piecrust


1 (15 ounce) can pumpkin


3/4 cup SPLENDA庐 No Calorie Sweetener, Granulated


1/3 cup brown sugar


2 teaspoons ground cinnamon


2 teaspoons ground ginger


1/2 teaspoon salt


1/8 teaspoon ground cloves


3/4 cup half-and-half


3 large eggs, lightly beaten


1 teaspoon vanilla extract





What you do:


1 Preheat oven to 375 degrees F.


2 Unfold piecrust; press out fold lines. Fit piecrust into a 9-inch pie plate according to package directions; fold edges under and crimp.


3 Stir together pumpkin and next 7 ingredients until blended. Add eggs and vanilla, stirring until blended. Pour filling into piecrust.


4 Bake for 50 to 60 minutes or until set in the center. Cool completely on a wire rack.

Mock apple Pie


PIE:


5 cups zucchini--peeled, seeded and sliced


1 1/4 cups whey low (white sugar substitute)


2 Tablespoons flour


1 1/4 teaspoons ground cinnamon


1 1/2 Tablespoons cream of tartar


2 Tablespoons lemon juice


1/4 teaspoon ground nutmeg


1/4 teaspoon pumpkin pie spice


1 pie crust





CRUMB TOPPING:


1/2 cup butter


3/4 cup carbalose flour


3/4 cup rolled oats


1/2 cup whey low brown sugar


3/4 Tablespoons cinnamon


1/2 teaspoon pumpkin pie spice





Instructions:1. Preheat oven to 375 degrees F.


2. While oven is heating, boil the sliced and seeded zucchini in water until tender.


3. Drain and cover with cold water and let stand for 5 min. then drain again.


4. Add zucchini, whey low white sugar, flour, cinnamon, cream of tartar, lemon juice, nutmeg and pumpkin pie spice together and mix well.


5. Pour into pie shell.


6. In a small mixing bowl, prepare the crumb topping by mixing the butter, carbalose flour, oats, whey low brown sugar, cinnamon and pumpkin pie spice together until crumbly.


7. Crumble on top of pie.


8. Bake for 40-50 min. until brown.





For a less soggy bottom I precooked (at 375 degrees F) the empty pie shell until very lightly brown. Remember to poke some holes with a fork before cooking crust. Nutritional Information:Per Serving--

Sugar Free Puddings, Sugar Free Pies. Pumpkin Pie





Call the nearest Old folks home, They have alot of diabetics and him sure their chef wouldnt mind giving you ideas.
My dad was diabetic and every year I made him a sugar free pumkin pie. He loved it...in fact most people ate it too even though they didn't have to.





I suggest going to the Equal website, it was an Equal Pumpkin Pie recipe that I used. IF you can't find it...e-mail me and I'll send you some recipes. (My dad is gone now so I'd love to share them with someone who's dad could enjoy them) I also have a great peach cobbler recipe I modified myself to make for him...along with other recipes... A lot was hit and miss, but I worked with it so he could enjoy the holidays too as he was always a sweet lover but once he became diabetic he could only eat sugar free items.

We too go my parents. I usually do the ham, bring the green bean casserole, the sweet potatoes (easy, get a can, cut them into bite size pieces, a few pats of real butter on top, a couple handfuls of brown sugar and top with marshmallows, all in a casserole dish), I make a carmel/apple pie and usually my fudge. Oh and deviled eggs (also easy, boil your eggs, peel when cool, cut in half putting the yolks in a big bowl and the egg whites on a tray. Smash the egg yolks, a food processor works great, add mayo or miracle whip, prepared mustard, salt and pepper, just keep tasting until it is how you want it. Put that yolk mixture in a piping bag or a plastic sandwich bag with a tip cut off and pipe into the egg white halfs. This always goes over great!)

Baked Cheese Grits - My family LOVES them!





4 cups grits (Quaker Quick Grits)


1 cup water


Follow directions on can to make the grits then add:





2 eggs


1 stick butter


2 cups sharp cheddar cheese (sharp taste the best)


I always add 1 tablespoon garlic %26amp; 1 teaspoon Pepper





I use a mixer to stir it all together or you can use a spoon


Pour it into a greased caserole dish and bake on 350 for 45 minutes. You can also add bacon bits before cooking or put bacon pieces on top about 15 min before its done cooking





Even if you don't like grits these are AWESOME!!! I've converted several non-grit eating people into eating these. They're always surprised how YUMYUM they are.

MICHIE's SWEET POTATO SOUFFLE:


3 lbs. sweet potatoes, peeled %26amp; cut into cubes


2 eggs


1/2 cup brown sugar - divided


1/2 cup butter - melted - divided


1 teaspoon salt


1 teaspoon ground cinnamon


up to 1/2 cup orange juice


1 cup chopped walnuts


large marshmallows


In a large saucepan over high heat, bring potatoes to boil, reduce heat; cover and simmer 15-20 minutes and drain. Beat potatoes until slightly smooth, beat in eggs, 1/4 cup brown sugar, 1/4 cup melted butter, salt and cinnamon. Starting with 1/4 cup orange juice, make mixture moist and fluffy. Spread in a 2-3 quart pan. Top with nuts. Sprinkle 1/4 cup brown sugar, then 1/4 cup melted butter. Place Marshmallows on top. Bake at 350 degrees for 25-30 minutes. Don't let marshmallows over cook.





Use this as a dipping sauce for Turkey:





SUE's CRANBERRY GLAZE SAUCE:


1 (16 oz.) can jellied cranberry sauce


1 cup brown sugar


1/4 cup orange juice


1 teaspoon ground cinnamon


Mix all ingredients together. Cook in a saucepan on medium heat until smooth and heated thoroughly.





OLGA's PUMPKIN PIE:


1 cup sugar


1/2 teaspoon salt


1 1/2 teaspoon ground cinnamon


1/2 teaspoon ground ginger


1/2 teaspoon ground allspice


1/2 teaspoon ground cloves


1/2 teaspoon ground nutmeg


1 1/2 cups pumpkin puree, canned or fresh


1 2/3 cups evaporated milk (I use 1 (12oz.) can)


2 eggs, lightly beaten


1 unbaked pastry shell (9-inch)


Combine sugar, salt, and spices in a large mixing bowl. Add pumpkin, evaporated milk, and eggs; mix well. Pour into pastry-lined pie pan. Bake at 425 degrees for 15 minutes. Shield the crust edge with a pie shield ring or fashion one with aluminum foil and place over edge. Reduce heat to 350 degrees and bake 40 minutes or until center is set.





KRISPY's CARROT CAKE:


2 cups sugar


1 1/2 cups Crisco oil


4 eggs


2 1/4 cups flour


1 teaspoon salt


2 teaspoons baking soda


2 teaspoons cinnamon


3 cups grated raw carrots


1 1/2 cups chopped walnuts


Mix in large bowl, sugar, oil and eggs; beat well. In separate bowl, sift flour, salt, baking soda and cinnamon. Blend dry ingredients into egg mixture. Stir in carrots and nuts. Pour into prepared pans. Bake at 300 degrees for about 60 minutes or until toothpick inserted in center comes out clean. Cool well before icing.





CREAM CHEESE FROSTING:


1 (8 ounces) package cream cheese, softened


1/2 cup margarine or butter, softened


1 teaspoon vanilla extract


3 cups sifted powdered sugar


1 Tablespoon milk


Cream all ingredients together until spreading consistency.
I have a sugar free dish that is great.It is a salad, but my daughter eats it as a dessert.1-cool whip,1-carton cottage cheese-1-can crushed pineapples(drained)-1-pack sugar free jello(any flavor).Mix all together and let it stand in the fridge(covered)over night if possible.stir before serving.As for a side dish, make a relish tray,black olives,chunked cheeses,green olives,baby gherkins,and purple onion.Put it all on a platter.

Green Bean Bundles





1 pound sliced bacon, cut in half horizonatally


1 package whole frozen green beans -- thawed and rinsed or use fresh green beans,trimmed and blanched; can also used canned whole GB's


1/4 cup butter


3/4 cup packed light brown sugar


2 teaspoons garlic powder





Group 6 to 8 beans together into a bundle and wrap a slice or 1/2 slice of bacon around the bundle of beans and secure with a toothpick.





Place bundles in a 9x13 inch baking dish in one layer.





In a saucepan, melt butter. Add brown sugar and garlic powder. Bring to a boil.





Remove from heat and pour over the beans.





Cover dish with foil and bake at 350ºF for 30 minutes.

Chocolate Pudding Cake





3/4 cup granulated sugar


1 cup plain flour


1/4 teaspoon salt


2 teaspoons of baking powder


2 Tablespoons cocoa


½ cup milk


1 teaspoon of vanilla


3 Tablespoons melted, cooled, margarine





Sift sugar, flour, salt, baking powder and cocoa together in pan. Stir in milk, margarine and vanilla. Batter will look like brownie batter. Spread batter into greased baking dish (Pyrex bowl or 9”x15” dish).





TOPPING:


½ cup of granulated sugar


½ cup brown sugar


1/4 cup cocoa





Mix topping sugars and cocoa together and sprinkle dry ingredients over batter.


Pour 1 ½ cups of tap water over all. DO NOT STIR.


Place in oven and bake at 350 degrees for 45 minutes or until topping is done.


(In the baking process, ingredients will reverse themselves - finished product will look like a brownie on top and have chocolate pudding on bottom. Serve in bowls with spoons.


Serves 6-8 people. Good with vanilla ice cream or cool whip.
Green Bean Casserole is a favorite


2 cans Cr. of Mush soup


1 c milk


2 tsp soy sauce


1/4 tsp pepper


8 c. cooked green beans


2 2/3 c French's French Fried Onions


1. Stir all but 1 c. Onions together. Put into a 3qt casserole.


2. Bake at 350 degrees for 30 min


3. Top with remaining onions. Bake 5 min more. Serves 12





Acorn Squash with Gorgonzola





2 Acorn squash


1/2 c. Crisco Butter Flavor shortening,melted


salt and pepper to taste


6 oz. Gorgonzola cheese, crumbled


3 T. raisins


1/4 c. seasoned dry breadcrumbs


1. Pierce squash with a knife in several places. Place squash directly on middle rack of oven.


2. Bake at 350 degrees for 45 min or just until tender. Let cool.


3. Cut each squash in half; remove and discard seeds.Cut each half into 2 wedges. Arrange skin side down on a lightly greased roasting pan. Bruch cut sides with shortening and salt and pepper to taste.


4.Combine cheese and raisins. Top each squash wedge with cheese mixture and sprinkle evenly with breadcrumbs; Drizzle with remaining shortening.


5. Bake at 350 degrees for 20 min or until cheese is golden and melted.





Pumpkin-Chocolate Rice Pudding





1 lg. egg


3 large eggs, separated


3/4. tsp slt, divided


1 15 oz. can pumpkin


1 12 oz. can evaporated milk


3/4 c. sugar


1 tsp ground cinnamon


1/2 tsp ground ginger


1/4 tsp ground cloves


1 3.5 oz Success white rice, uncooked


1/2 c. semi-sweet chocolate chips


1 7oz jar marshmallow cream


1. Whisk together egg, 3 egg yolks, 1/2 tsp. salt, pumpkin, and mext 5 ingredients ina lg. mixing bowl until smooth;Stir in rice and chips. Spoon mix into a lightly greased 1 1/2 qt baking dish. Place dish in a 9x13 baking dish; add hot water to 9x13 pan to a depth of 1';.


2. Bake at 350 degrees for 15 min Stir rice mix, and bake 40 min more.


3. Beat 3 egg whites and remaining 1/4 tsp salt. at high speed with an electric mixer until soft peaks form. Gradually add marshmallow cream, beating at high speed for 4 min or until stiff peaks form. Spread meringue evenly over warm pudding, sealing edges.


4. Bake 15 min more or until meringue is lightly golden brown. Serve warm, or cool completely.

Easy you can make pistachio pudding-you will need 1 tub (8oz) of cool whip, 1 can of fruit cocktail, undrained, 1 box of pistcahio pudding -mix together chill and viola your dessert.. Side dish hmm either green been casserole or scalloped corn or sweet potatoes..
Get a frozen pie, I think that Mrs Smith's are great, very easy to deal with.

Go to cooks.com, type in something that you have to use as a side dish, or something that sounds good and everything pertaining to that ingredient will pop up. It's wonderful because the directions are really easy to follow. Try this for a easy but yummy dessert.





Oreo Cheese Cake





1-prepared Oreo Pie Crust


1 8oz brick of cream cheese at room temp


1-8oz tub cool whip thawed


1-tsp vanilla


1/3 cup sugar


Chocolate ice cream topping. DO NOT HEAT IT! Just use at room temp. Use something thick, not hershey's.





Mix cream cheese, cool whip, vanilla and sugar on low until well blended. Refrigerate 1 hour. Drizzle chocolate topping and refrigerate at least another hour before serving. Can be made a day in advance. (Other options are using a prepared graham cracker or shortbread crust and using fresh or thawn frozen berries as a topping. Wonderful anyway prepared!)

IT is just amazing and everyone there will love it. To be vegan friendly, you have to use vegetable broth and earth balance in place of the butter. This has become a staple in our house where I am the only vegan...


If you do a google search for vegan pumpkin pie, recipes abound. Just make sure if you buy a pre-made crust, that none of the ingredients came from animals. I would do this by phone with the brother or his girlfriend if I was you...It is always nice to be included in dessert...Help...I need recipes or links for Vegan thanksgiving meals?

I have one kid who LOVES green bean casserole (ick, yuk, patooie!) but I make it for her......I'm a scratch cook/baker so opening a can KILLS ME but for her, I do it,lol....





I have four kids..counting the hubby, five....and they all suck down faster than a Hoover on steriods...along with the dreaded green bean casserole.....





Turkey, sausage, fruit (cranberries %26amp; apples) %26amp; herb stuffing(my family's recipe), gravy, 'smashed' potaotes, sweet potatoes casserole, sweet corn, corn bread, buttermilk biscuits,home made rye bread, cranberry sauce, carrots,turnips or roasted acorn squash, 'punkin' pie,apple pie, gingerbread cookies.

Pink Sh!t. My sister, bless her sole, makes the worse cranberry sauce in the world. It has whole cranberries, nuts and horseradish in it! After three years, I was asked to tell her how we make fun of her making this. She knows, but mom likes it. She makes it and knows that it's a complete waste of time and money. So, now any newcomer at the table just HAS to try the Pink Sh!t, then we all have a good laugh.

I guess I am a kid...I'm almost 17, but all the younger kids seem to like this homemade pumpkin bread that I prepare. I remember my younger cousins feeling grossed out at the thought of eating canned pumpkin, but when they tasted the bread they couldn't believe that it was so good!

I have two boys. They like to eat the turkey ( my oldest son calls it chicken for some odd reason) mashed potato with gravy and dinner rolls. and sweets they can have after wards has well.
Twice Baked Potatoes, Stuffing Balls, Raisin Bread Pudding, and mom's homemade fudge
if my son could eat nothing but the stuffing and gravy, he'd be happy all year.

3 to 4 small ears corn


1 can (15 to 16 ounces) black beans, drained and rinsed thoroughly


1 large tomato, seeds removed, diced


1 large clove garlic, minced


1/4 cup minced red onion


2 to 3 tablespoons finely minced jalapeno or poblano pepper


juice of 1 lime, about 3 tablespoons


3 tablespoons fresh chopped cilantro


dash salt and pepper, or to taste


PREPARATION:





Grill or broil corn to char slightly; let cool.


Combine remaining ingredients in a bowl. Cut corn from cobs and add to the mixture. Refrigerate for at least an hour before serving time.Thanksgiving recipes needed!!!!!?

- 1 can (10 3/4 oz.) Campbell's庐 Cream of Mushroom Soup


- 3/4 cup milk


- 1/8 tsp. black pepper


- 2 pkgs. (9 oz. each) frozen cut green beans, thawed*


- 1 1/3 cups French's庐 Original French Fried Onions








1. Combine soup, milk and pepper in a 1 1/2 qt. baking dish; stir until blended. Stir in beans and 2/3 cup French's French Fried Onions.





2. Bake at 350潞F for 30 minutes or until hot. Stir. Sprinkle with remaining 2/3 cup French Fried Onions. Bake 5 minutes or until onions are golden.





*Or 2 cans (14 1/2 oz. each) cut green beans, drained.

Carnation Pumpkin Pie


3/4 cup granulated sugar


1 teaspoon ground cinnamon


1/2 teaspoon salt


1/2 teaspoon ground ginger


1/4 teaspoon ground cloves


2 large eggs


1 can (15 oz.) LIBBY'S庐 100% Pure Pumpkin


1 can (12 fl. oz.) NESTL脡庐 CARNATION庐 Evaporated Milk


1 unbaked 9-inch (4-cup volume) deep-dish pie shell


Whipped cream (optional)





Directions:


MIX sugar, cinnamon, salt, ginger and cloves in small bowl. Beat eggs in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk.





POUR into pie shell.





BAKE in preheated 425掳 F oven for 15 minutes. Reduce temperature to 350掳 F; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. Top with whipped cream before serving.





On the green bean casserole you can substitute the regular cream of mushroom soup with the cream of mushroom soup with roasted garlic and it is a wonderful change and smells wonderful!

1 can (16 ounce) can of pumpkin puree,


1 can (14 ounce) can of sweetened condensed milk


1 teaspoon pumpkin pie spice


1 pie shell


Cooking Instructions


Preheat the oven to 425 F





Combine eggs, pumpkin puree, sweetened condensed milk and pumpkin pie spice and mix well.





Pour the mixture into a pie shell.





Bake for 15 minuets at 425 degrees





Then reduce the heat to 350 degrees. And bake for 35-40 minuets longer.

Pumpkin Gooey Butter Cakes


Cake:


1 (18 1/4-ounce) package yellow cake mix


1 egg


8 tablespoons butter, melted


Filling:


1 (8-ounce) package cream cheese, softened


1 (15-ounce) can pumpkin (plain, no spices added)


3 eggs


1 teaspoon vanilla


8 tablespoons butter, melted


1 (16-ounce) box powdered sugar


1 teaspoon cinnamon


1 teaspoon nutmeg





Preheat oven to 350 degrees F.


Combine the cake mix, egg, and butter and mix well with an electric mixer. Pat the mixture into the bottom of a lightly greased 13 by 9-inch baking pan.





To make the filling: In a large bowl, beat the cream cheese and pumpkin until smooth. Add the eggs, vanilla, and butter, and beat together. Next, add the powdered sugar, cinnamon, nutmeg, and mix well. Spread pumpkin mixture over cake batter and bake for 40 to 50 minutes. Make sure not to over bake as the center should be a little gooey.





Serve with fresh whipped cream.

    6-green onions


    1-jar dried beef


    2-teaspoons Worcestershire sauce

    cut the green onions and dried beef in sm pieces add all but the nuts and roll into a lg ball and then open bag of nuts and roll the cheese ball in the nuts.Serve with Crackers.

    (GREEN TOMATO PICKLES)





    2 qts. green tomatoes, sliced


    12 med. size onions


    2 c. brown sugar (1 lb.)


    1 c. cider vinegar


    Mixed pickle spices, to taste





    Alternate layers of tomatoes and onions with salt. Let stand overnight. Drain in the morning. Cover with fresh water and boil for 30 minutes. Drain thoroughly. Add brown sugar, vinegar and spices and boil for 1 hour. bottle in sterilized jars. Excellent with cold meats.





    SNOWFLAKE PUDDING





    1 c. sugar


    1 envelope (1 tbsp.) unflavored gelatin


    1/2 tsp. salt


    1 1/4 c. milk


    1 tsp. vanilla


    1 (3 1/2 oz.) can (about 1 1/2 c.) flaked coconut


    2 c. heavy cream, whipped





    Grated fresh coconut makes this better.


    Thoroughly mix sugar, gelatin, and salt; add milk. Stir over medium heat until gelatin and sugar are dissolved. Chill until partially set. Add vanilla. Fold in coconut, then whipped cream. Pile into 1 1/2 quart mold; chill until firm, at least 4 hours. Unmold. Serve with Crimson Raspberry Sauce. Serves 8.





    Crimson Raspberry Sauce: Thaw and crush one 10 ounce package frozen red raspberries. Thoroughly combine with 1 1/2 teaspoons cornstarch; add 1/2 cup red currant jelly. Bring to boil. Cook and stir until mixture is clear and thickens slightly. Strain; chill. Makes about 1 1/3 cups.





    FAVORITe BARS





    2 jars marshmallow creme


    1/2 cup peanut butter


    1 tbsp vanilla


    1 stick butter


    1/2 box Wheaties energy crunch


    1 cup granola, plain or with nuts





    Melt butter and vanilla together for 1 min in the microwave. Add peanut butter and marshmallow creme and stir well to combine.


    Add Wheaties to the mixture and spread it out in a plastic refrigerator container. Add granola to the top and press down into the mix with an offset spatula.





    Chill and serve.
    Snacks:





    --Triscuit crackers with cream cheese, a slice of fresh tomato and a bit of fresh basil.


    --Deviled eggs.


    --A block of cream cheese with chilie sauce or salsa (seasoned to taste) poured over it, with cold baby shrimp. Eat with crackers or corn chips.


    --Sliced cheese and cracker tray (mix and match is good for kids).





    Desserts:





    I have made lemon squares since I was about 10, and they are always a hit. My receipe is at home, and I'm at work, but this receipe is almost exactly like mine. I always use fresh lemon juice and fresh lemon zest in the filling. It gives them an amazing flavor.





    INGREDIENTS


    1 cup all-purpose flour


    1/2 cup butter


    1/4 cup confectioners' sugar


    2 eggs


    1 cup white sugar


    1 teaspoon baking powder


    1/4 teaspoon salt


    2 tablespoons lemon juice


    1/3 cup confectioners' sugar for dusting





    DIRECTIONS


    Preheat oven to 350 degrees F. Mix flour, butter and powdered sugar thoroughly. Press evenly into an ungreased 8 x 8 x 2 inch or 9 x 9 x 2 inch square pan. Make a little rim up the edges to hold in the filling. A quarter inch or so will do it. Bake 20 minutes.


    Beat remaining ingredients about 3 minutes of until light and fluffy. Pour over the hot crust, spreading it out evenly.


    Bake about 25 minutes longer or until no imprint remains when touched lightly in the center. Remove from oven, sprinkle the extra powdered sugar on the top, if you like. Cool, cut into squares.
    your having thanksgiving dinner so you dont want to load up on snacks, keep it simple, cheese and sausages with crackers or spinach dip or hummus with veges / pita bread.





    Dessert ideas, have pumpkin cheesecake or pecan pie. Make spice cupcakes or banana bread muffins pumpkin muffins whatever. Dont go crazy! THe dinner itself will be time consuming.

    This is a wonderful dessert recipe. It's super easy and you can make it the day before. People rave about it and ask for the recipe all the time.





    Pudding Fluff


    2 cps Milk


    2 sm box of Jell-o Instant Pudding any flavor you choose


    16 oz container of Cool Whip


    Graham Cracker or Oreo Cookie Crust





    Put the milk in a mixing bowl, add the pudding mix. Whisk until blended, quickly fold in the Cool Whip. Scoop into the graham cracker or Oreo crust and refrigerate. This is also good frozen.





    Cheesecake version, use a potato masher to blend 8oz of softened cream cheese into the milk before adding the pudding mix and use Vanilla pudding. I like layering the cream cheese version with chocolate. The Berry Topping below is real good over the cream cheese version.





    Yummy Berry Topping


    1 lb fresh strawberries, cleaned and cut up


    1 can raspberry pie filling


    Mix the fresh strawberries with the pie filling and serve it with the cheesecake, vanilla or chocolate versions. Great with a container of blackberries added in. Could also be used as a layer in the above option.

    Since you've already got lots of great ideas for reception food, I'll throw this out-- why don't you have a nice dinner out with your parents instead of cooking it yourself. Or, have a brunch Thanksgiving meal late morning-midday. You could incorporate some traditional Thanksgiving components into the meal-- like turkey sausage (the gourmet/specialty kind, not the kind people get because it's healthier), pumpkin bread (maybe even make french toast with it), maybe a cranberry cocktail if you're drinkers.

    Combine 1 jar of grape jelly and 1 jar of chili sauce (This comes in a jar like ketchup NOT hot dog chili!)


    Stir well.


    Add several packages of Little Smokies (small smoked sausages)


    Heat thoroughly


    Yummy!


    But are you sure you have to cook Thanksgiving dinner?????


    Maybe you can do dinner on the weekend before or after. I don't know about you, but I could never fix food for a wedding reception and cook TG dinner on the same day!!


    You can also make little pumpkin tarts, a bit more work involved.


    Buy tiny tart shells already made. Cream cheese and sugar mixture in the bottom, canned pumpkin %26amp; Coolwhip mixture on top. Top w whipped topping and sprinkle w cinnimon. They are pretty and very fall looking.

    i think turkey salad made as you make chicken salad with cranberry jelly on bite size bread: spiced ham on rye and cut small. miniature rolls and deviled eggs and relishes and fruit on a pic and a variety of cheeses
    A wedding on Thanksgiving? A day when people like to be with their families, eat turkey, relax and the guys watch football? The anniversary is not going to have it's own special day? So later when they have kids and such ddoing the traditional thanksgiving a romantic celebration for the anniversary is out the window. I suppose its arranged at this point. I just can't believe that some people don't think things through. Just a thought. Anyway keep it simple as its thanksgiving. Deviled eggs, sausage rolls, etc. always go over.
    Here are a couple of my family's favorites:





    Chicken/Bacon Wraps





    Buy the fajita meat that comes prepackaged. Cut off excess fat, and cut into bite size pieces (raw). Cut a package of bacon in half. Wrap each bite of chicken with half a strip of bacon, and one almond. Bake for one hour on 350. It may smoke a lot, so be prepared. Serve with a honey mustard.





    Cream Cheese Dip





    Buy a stick of cream cheese. (looks more like a block really). Cut in half length wise, and then cut across making several pats of cream cheese. Pour over this half a cup each of worcestire sauce and soy sauce. Top with green onion. Serve with Triscuits.





    Salmon Wheels


    Buy smoked salmon. Smear cream cheese and roll up. cut into bite size wheels and serve just like that or with mini bagels.





    Stuffed Jalapenos or Mushrooms





    Cut up bacon into tiny slices and fry up, drain.. mix with a cup of mayo and a package of shredded cheddar cheese, and a can of water chestnuts. Buy a can of jalapenos. Stuff jalapenos with mixture and serve.





    Another Stuffing





    Buy frozen cocktail shrimp. Thaw and mix with cream cheese, green onion, a package of hidden valley ranch dressing MIX.. not the liquid. It's okay to shred up the shrimp. Stuff this mixture in either jalapenos or mushroom caps and heat in oven til warm.





    Spinach Dip served in King's Hawaiian Round Bread is awesome and easy. The recipe is on the package of Knorr's Vegetable Soup.

    whats the budget for this reception. I just came from a really nice wedding where they had like a tea party finger food theme for the reception. They had a bunch of cold salads, shrimp cocktail and all these things made with Filo dough. They had cheese balls, crab puffs, pigs in a blanket, a huge fresh fruit display pineapple chunks, mango slivers, chocolate covered strawberries, seasonal fruits and even a little filo cups with a fruit compote and mini chocolate teramisu.
