Pecan Pie


Pastry for 9-inch one crust pie


1/3 cup butter, room temperature


3/4 cup firmly packed brown sugar


3 eggs


1 cup light corn syrup


1 cup coarsely chopped pecans


1/8 teaspoon salt


1 teaspoons vanilla extract


1/3 cup raisins





Preheat oven to 375 degrees F. Prepare pie pastry. In a large bowl, cream butter until light and fluffy; gradually add brown sugar. Beat in eggs, one at a time, beating well after each addition. Add corn syrup, pecans, salt, and vanilla extract; stir until well blended. Stir in raisins, Pour into pastry-line pie plate.





Bake approximately 40 to 50 minutes or until the pie center has a slight jiggle to it when shaken. Remove from oven and cool on a wire rack before cutting and serving.





Makes 8 servings.








Turkey





INGREDIENTS


1 cup apricot nectar


1 cup apricot preserves


2 tablespoons minced fresh ginger root


1 tablespoon honey





3/4 cup unsalted butter, softened


3 tablespoons chopped fresh sage


1 1/2 teaspoons salt


1 teaspoon ground black pepper





2 tablespoons unsalted butter


3 onions, thinly sliced


6 ounces thinly sliced shallots





22 pounds whole turkey


2 cups low-sodium chicken broth


1 teaspoon chopped fresh thyme


1/2 teaspoon dried sage


2 cups low-sodium chicken broth


salt and pepper to taste








DIRECTIONS


Combine apricot nectar, preserves, ginger, and honey in a small saucepan and bring to boil. Reduce heat to medium-low, and simmer until thickened and reduced to 1-1/4 cups, about 15 minutes.


Blend 3/4 cup unsalted butter at room temperature, 3 tablespoons chopped fresh sage, salt, and pepper in small bowl. Set aside.


Melt 2 tablespoons unsalted butter in a large heavy skillet over medium heat. Add onions and shallots; saute until very soft and light brown, about 20 minutes.


Position rack in lowest third of oven. Preheat to 400 degrees F (200 degrees C). Season turkey cavity with salt and pepper. Place turkey, breast side up, on a rack in a large roasting pan. Slide hand under skin of turkey breast to loosen skin. Spread half of herb butter over breast under skin. Rub remaining herb butter over outside of turkey. Tie legs together loosely to hold shape of turkey.


Roast turkey for 30 minutes in the preheated oven. Reduce oven temperature to 325 degrees F (165 degrees C), and continue roasting 1 hour 30 minutes, basting occasionally with pan drippings. Tent turkey with aluminum foil; roast 45 minutes longer. Add onion mixture, 1 cup broth, thyme, and 1/2 teaspoon chopped fresh sage to the roasting pan. Roast 15 more minutes before brushing 1/2 cup apricot glaze over turkey. Continue to roast turkey uncovered, brushing occasionally with glaze. Add more broth to the pan if necessary. Bake 40 minutes longer for unstuffed turkey, and 1 hour 10 minutes longer for stuffed turkey, or until meat thermometer inserted into thickest part of thigh registers 180 degrees F (80 degrees C). Place turkey on a platter, and tent with foil. Let stand 30 minutes. Reserve mixture in pan for gravy.


Pour contents of roasting pan into a strainer set over a large bowl. Skim fat from pan juices using a large spoon. Transfer the onion mixture to a blender. Add 1 cup pan juices, and puree until smooth, adding more pan juices and chicken broth if necessary to thin sauce to desired consistency. Transfer sauce to a large saucepan, and bring to a boil. Cook until color deepens, skimming off any foam, about 5 minutes. Season with salt and pepper.














Mashed Potatoes and Yam





INGREDIENTS


8 cloves garlic


3 tablespoons olive oil


1 1/2 pounds baking potatoes, peeled and cubed


1 1/2 pounds yams, peeled and cubed


1/2 cup milk


1/4 cup butter


1/2 teaspoon dried rosemary


1/2 cup grated Parmesan cheese


salt and pepper to taste








DIRECTIONS


Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8 inch square baking dish.


Place garlic in small ovenproof bowl, and drizzle with olive oil. Roast for 30 minutes, or until very soft. Cool and peel the garlic, and reserve the oil.


Boil potatoes and yams in a large pot of salted water until tender, about 20 minutes. Drain, reserving 1 cup liquid.


Place potatoes and yams in a large bowl with milk, butter, rosemary, garlic, and reserved olive oil. Mash to desired consistency, adding reserved cooking liquid as needed. Mix in 1/4 cup cheese. Season with salt and pepper to taste. Transfer to the prepared baking dish. Sprinkle with remaining cheese.

Carnation's Pumpkin Pie


3/4 cup granulated sugar


1 teaspoon ground cinnamon


1/2 teaspoon salt


1/2 teaspoon ground ginger


1/4 teaspoon ground cloves


2 large eggs


1 can (15 oz.) LIBBY'S庐 100% Pure Pumpkin


1 can (12 fl. oz.) NESTL脡庐 CARNATION庐 Evaporated Milk


1 unbaked 9-inch (4-cup volume) deep-dish pie shell


Whipped cream (optional)





Directions:


MIX sugar, cinnamon, salt, ginger and cloves in small bowl. Beat eggs in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk.





POUR into pie shell.





BAKE in preheated 425掳 F oven for 15 minutes. Reduce temperature to 350掳 F; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. Top with whipped cream before serving.

Pumpkin angel food cake





Take an angel food cake mix and mix according to directions


then fold in 1 can of pumpkin pie mix. put into a 13 x 9 and bake at 350 till toothpick comes out clean (about 30 minutes) then refridgerate till ready to serve, cut into squares and serve with whip cream on top. can also lightly dust with pumpkin pie spice on whip cream.
An extra large turkey breast seasoned with ground red, green, white, and black peppercorn, and coriander underneath the skin.


Baked yams with pecans.


Baked potatoes with the skin on seasoned with celery seed.


Baked spinach, tomato, and light feta cheese flatbread.
