Thanksgiving Acorn Squash Recipes?

I'd like a squash recipe for Thanksgiving that not only taste good but looks good on the table.


I know I can find hundreds of recipes on the web, but I'm hoping you'll share your recipes that have been tried and were a success.

BAKED ACORN SQUASH





Sprinkle nutmeg


1 c. orange juice


4 tsp. butter





1. Wash the acorn squash well and cut in half, but do not pare.


2. Remove seeds.





3. Place the half squash cut side down in pan. Pour boiling water to 1/4 inch depth. Bake at 400 degrees for about 15 minutes, then turn the half so that the cut side is up.





4. When tender, remove from pan and scoop out the squash carefully, so that the shell remains intact. Mash and measure out 1/2 cup and mix with orange juice, nutmeg and butter, then return the mixture to the shell.





5. Reheat for a short time if necessary, and serve at once.

STUFFED ACORN SQUASH





3 sm. acorn squash (approximately 4 inches in diameter)


1 c. cooked rice


1 c. herb seasoned stuffing mix (crumb style)


1/2 c. finely chopped onion


1/2 c. low sodium chicken broth


1/4 c. raisins


1/3 c. unsalted dry roasted walnuts (optional)


1/4 tsp. freshly ground black pepper





Preheat oven to 400 degrees. Cut each squash in half and spoon our seeds, set aside. In a bowl, combine all ingredients except squash. Fill squash halves loosely with stuffing mixture. Place squash in a 9 x 13 inch pan and cover with foil. Bake 1 to 1 1/4 hours, or until squash is tender when pierced with the tip of a knife. Serve hotThanksgiving Acorn Squash Recipes?
Spiced Acorn Squash





3 acorn squash


3 tbsp. Honey


1 tsp ground ginger


1/4 tsp nutmeg


2 tbsp butter


salt and pepper





Mix butter, honey, spices, salt and pepper in measuring cup. Heat in microwave until butter is melted. Cut squash in half and remove seeds. Arrange cut side down in shallow baking dish and bake 30 min at 375 degrees.*** Turn cut side up, pierce with fork, but do not puncture skin, and spoon butter mixture into cavities of squash.


Bake 30 to 40 minutes or till tender


***Squash can also be cooked in microwave until tender. Fill cavities with butter mixture and microwave until tender.


Serves 6
ACORN SQUASH DELIGHT





3 sm. acorn squash


Melted butter


Applesauce


1 tsp. brown sugar


Dash of cinnamon





Select small acorn squash, wash, half clean seeds from center. Brush with melted butter. Bake 1 hour at 350 degrees in baking dish. Remove from oven, fill each squash with applesauce, 1 teaspoon brown sugar and a dash of cinnamon. Return to oven for 10 minutes. Serve immediately. Serves 6.

I like this one coz its real simple to make and it tastes yum too.

Squash Risotto





2 cups of acorn squash 'balls' (use a melon baller )


2 ounces of extra virgin olive oil


1/2 cup of chopped onion


2 cloves of minced garlic


1/2 cup of good white wine


2-3 cups of rich chicken broth


1 tablespoon of minced rosemary


1/2 cup of freshly grated parmesan cheese


1/2 cup of toasted sunflower seeds


salt and pepper





Instructions


Heat a thick bottomed pot large enough to accommodate almost all of the squash in a single layer. Heat the pot until it is very hot than in quick succession add the oil and squash. Stir the squash quickly as it caramelizes and the outside of the balls begin to darken. When they are well toasted reduce the heat to medium and add the onions. Stir for a few minutes as the onion also caramelizes a bit. Add the garlic and stir until it is fully aromatized, a minute more.





Add the white wine and stir as it reduces coating the squash. Reduce the heat to low. Add half of the chicken broth and rosemary and continue stirring as the squash cooks. If needed add more of the chicken broth until the squash is just cooked. Adjust the heat as needed trying to evaporate the liquid and glaze and cook the squash simultaneously.





When the squash is tender (not mushy), add the cheese, sunflower seeds and season to taste with the salt and pepper.





Serve immediately or hold for five minutes before serving.
2 medium acorn squash


1 can of condensed sweet milk


sprinkle of pumpkin pie spice


1 deep dish pie shell





cut squash in half, scrape out all seeds. put squash on baking pan in oven at 350 degrees Farenheit for about 45 minutes to an hour.





once cooked, scoop out meat of squash and mash with potato masher, pour in the can of condensed sweet milk, sprinkle with pumpkin pie seasoning, and stir. pour into pie shell, and bake for 45 min to one hour or until knife when inserted comes out clean. a delicious, healthy dessert! Hope you enjoy
