Baked Corn








3 eggs


1-14 戮 ounce Can Cream Style Corn


1-14 ounce can Eagle brand sweetened milk (low fat or fat free is OK)


Salt %26amp; Pepper to taste


1 Tablespoon corn starch





Separate the eggs and mix all ingredients except egg whites. Beat the egg whites until frothy but not stiff. Fold egg whites into the mixture. Place in a covered 1.6 liter 鈥?2 qt. casserole dish, bake at 350 covered for 30 minutes, remove cover and bake 30 minutes more.

Carrot Souffle





2 pounds fresh carrots, sliced*


6 large eggs


1 cup sugar, divided


1/3 cup flour (self-rising)


3/4 cup butter or margarine, melted and divided


1/4 teaspoon salt


1/4 teaspoon baking soda


1/8 teaspoon ground nutmeg


2 teaspoons vanilla extract


1 cup chopped walnuts











COOK carrot in water to cover in a large saucepan over medium-high heat 20 to 25 minutes or until very tender; drain well.





PROCESS carrot and eggs in a blender or food processor until smooth, stopping to scrape down sides.





ADD 2/3 cup sugar, flour, 1/2 cup butter, salt, nutmeg, baking soda and vanilla; process until smooth. Pour mixture into a lightly greased 13- x 9-inch baking dish.





BAKE at 350掳 for 40 to 45 minutes or until set. Combine remaining 1/3 cup sugar, 1/4 cup butter, and walnuts. Top souffl茅 with mixture; bake 5 to 10 more minutes. Yield: 8 to 10 servings.





Prep: 45 min., Bake: 55 min.
A turkey is easy to fix but a this late time you would need to get a fresh one. Squash is also very easy I just wrote the directions a few questions ago. A ham you just basically heat through. Buy a frozen pie at the grocery store and follow the baking directions.
